Your culinary adventure begins in the Marrakech spice souk — the Rahba Kedima — where your guide introduces you to the extraordinary array of spices, herbs, and flavourings that define Moroccan cooking: ras el hanout (a blend of up to 30 spices), saffron, preserved lemons, argan oil, cumin, coriander, and turmeric. You'll select fresh ingredients for your cooking session and learn how to identify and combine spices like a local chef.
Back in the riad kitchen, you'll cook a full three-course Moroccan meal under expert guidance: begin with a traditional Moroccan salad selection; then prepare a classic chicken or vegetable tagine with preserved lemon and olives; learn the technique of steaming perfect couscous; and, if time allows, attempt the delicate layers of a bastilla pastry. All dishes are seasoned to your taste as you cook.
The class concludes with the most rewarding part — eating the meal you've prepared, together around the table, with fresh bread and mint tea. You'll leave with printed recipe cards and the confidence to recreate these dishes at home.
